Hi Team,

Hope you had an incredible week! I spent the first half of the week at home and then headed to Florida with my mom and sister for a weekend full of beach walks, books, and delicious fresh food.

I’ve been reading two books I wanted to share a bit about: The Carnivore Code by Paul Saladino as well as The Great Cholesterol Myth by Johnny Bowden and Stephen Sinatra.

I’ve been a fan of Paul Saladino for a long time — I believe he’s been ahead of the curve when it comes to a lot of health practices and it’s been great to see him shift his approach over time. I recently listened to him on The Skinny Confidential podcast which reignited my interest in his work and excitement around an animal-based approach to food.

In fact, I felt the best I’ve felt in in years when I did his animal-based diet for a few weeks at the beginning of the summer. Regardless, my posts about animal-based eating are always accompanied by one question: aren’t you worried about what all this meat does to your cholesterol?

And the answer is that for me in particular, no — I’m not. In The Great Cholesterol Myth the authors walk through why high LDL cholesterol isn’t actually a problem if you’re metabolically heathy, how to define metabolic health, and diving into a deeper understanding of statins as they relate to cholesterol.

Just wanted to dive a bit deeper on this topic and point you in the direction of some resources that I love on the topic as I get questions about it consistently.

Anyway, I digress — let’s jump into a week of delicious food! This week is another prep-heavy one — nice for my people going into offices or those who just want more convenience. Since you’re front-loading a lot of the prep, almost all of the meals can be reheated and assembled in less than five minutes when you’re ready to eat — so ideal for these busy summer months.
